There are two types of SEO, On page, and Off Page.
On page optimisation is really about making sure your website is easy for Google to crawl when it visits, making sure your content is relevant and mentions your keywords enough times, without being 'spammy' or trying to 'trick' Google. After this there are certain rules based around H1 tags and meta data that should be loosely followed.
Off page optimisation is quite an in depth subject, and one that some SEO companies avoid talking about too much! - Like any SEO, to carry out a good quality off page SEO campaign can be hard work. Off page SEO is all about link building. A major part of the Google algorithm is concerned with how many websites link to you, each link in (or backlink) counting as a 'vote' for your website and helping raise its profile in the Google results pages... lots of people know this, but actually more important than how many can be how good a quality those links are. One link from a Google PR4 website for instance is worth around 4.5 links from a PR3 website.

The other important factor in off page search engine optimisation link building is content. Whilst it is easy to get links to your website, say by spamming people's blogs with hyperlinked comments, these links are relatively poor quality as regards relevant content (Google likes your links to be from a page that is relevant to your websites subject matter - often referred to as being 'On Topic')
